What is mixing?

Mixing is the art and science of balancing many recorded tracks into a coherent, emotionally satisfying stereo (or surround) image.

The mix engineer chooses: how loud, where in the stereo field, what frequencies, what dynamics, and what space (reverb) each element occupies.
